Duck Egg Veggie Wraps Recipe
Ingredients:
2 large duck eggs
Handful of spinach
Mixed veggies (e.g., bell peppers, onions, mushrooms)
Butter (such as Karagold Kraftfed butter)
Cheese (sliced Colby Jack or your preferred type)
Taco seasoning
Salt and pepper to taste
Tortillas (flour or whole wheat)
Instructions:
Preparation:
Chop the mixed veggies into small pieces.
Wash and dry the spinach leaves.
Slice the cheese if not already sliced.
Heat a pan over medium heat and add a little butter.
Sauté the mixed veggies until they are tender and lightly browned.
Cooking the Eggs:
Crack the duck eggs into a bowl and whisk them until well combined.
Pour the whisked eggs into the pan with the sautéed veggies.
Allow the eggs to cook, stirring occasionally, until they are just starting to set.
Adding Cheese and Seasoning:
Sprinkle a pinch of salt and pepper over the eggs.
Lay slices of cheese on top of the partially cooked eggs.
Cover the pan with a lid briefly to help the cheese melt faster.
Assembling the Wraps:
Warm the tortillas on a separate skillet or in the microwave for a few seconds.
Once the cheese has melted, spoon the egg and veggie mixture onto the center of each tortilla.
Sprinkle a dash of taco seasoning over the mixture for extra flavor.
Wrapping It Up:
Fold the sides of the tortilla over the filling.
Roll the tortilla tightly to form a wrap.
Repeat with the remaining tortillas and filling.

Shrimp and Fruit Salsa Wrap
Ingredients:
Cooked shrimp
Fresh mango, diced
Fresh strawberries, diced
Avocado, diced
Onion, diced
Rotel (canned diced tomatoes with green chilies)
Lime juice
Lettuce leaves
Tortillas
Instructions:
Prepare the Fruit Salsa:
In a bowl, combine diced mango, strawberries, avocado, onion, and Rotel.
Squeeze fresh lime juice over the mixture and season with salt and pepper to taste.
Mix well and set aside to let the flavors meld.
Assemble the Wrap:
Lay a tortilla flat on a clean surface.
Place lettuce leaves on the tortilla.
Add cooked shrimp on top of the lettuce.
Spoon the fruit salsa mixture generously over the shrimp.
Wrap it Up:
Fold the sides of the tortilla over the filling.
Roll the tortilla tightly to form a wrap.
Secure with a toothpick if needed.

2. Black Bean and Broccoli Sprout Wrap
Ingredients:
Canned black beans, drained and rinsed
Nutritional yeast
Lemon juice
Avocado, sliced
Broccoli sprouts
Feta cheese (optional)
Shredded lettuce
Tortillas
Instructions:
Prepare the Black Bean Mixture:
In a bowl, combine black beans, nutritional yeast, and a squeeze of lemon juice.
Mix well to coat the beans evenly.
Assemble the Wrap:
Lay a tortilla flat on a clean surface.
Spread mashed avocado on the tortilla.
Spoon the black bean mixture over the avocado.
Sprinkle broccoli sprouts and crumbled feta cheese (if using) on top.
Wrap it Up:
Fold in the sides of the tortilla.
