We have been making that starter now let’s make dough !
100g starter
300g water
500g flour
12g kosher salt
Mix to a shaggy mass
Rest 15 min fold . Repeat 3 times
Bulk ferment until doubled 4 hrs +
Form loaf and ferment in fridge overnight
When ready to bake . Remove loaf . Preheat oven to 450 bake 20 min covered , 20 min uncovered or until dark brown and internal temp 200 degrees minimally.
