8 Boneless Chicken Thighs
1 Zucchini, Sliced
3 Peppers, Cut into chunks
1 Onion
2 Garlic cloves
Zaatar Seasoning
Salt and Pepper
Lemon olive oil
In a large bowl rub Chicken thighs with zattar seasoning, olive oil, salt, and pepper.
Add vegetables to a sheet tray, sprinkle with seasoning and olive oil
Roast at 400 degrees until Chicken is 165 degrees. Remove the chicken and put the vegetables back in if they require further cooking. Plate up veggies and chicken and enjoy!
There are endless variations you can do with sheet pan meals and we will continue to explore! I always recommend having a plate filled with vegetables and healthy protein. This just makes it easy.
