Stuffed Spaghetti Squash for Brain-Boosting Bliss
Ingredients:
1 medium-sized spaghetti squash
Olive oil
Kosher salt
Ground lamb (or preferred ground meat)
Onion, diced
Lemon zest
Tomato paste
Tapenade (optional)
Italian herbs (fresh or dried)
Feta cheese
Sun-dried tomatoes (optional)
Mozzarella cheese (optional)
Black pepper
Cayenne pepper (optional)
Additional vegetables such as shredded carrots or zucchini (optional)
Instructions:
Preheat and Prepare: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy parts. Drizzle the interior with olive oil and sprinkle with kosher salt. Place the halves face down on a baking sheet and roast in the preheated oven for about 20 minutes, or until fork-tender.
Prepare the Filling: While the squash is roasting, heat some olive oil in a skillet over medium heat. Sauté the diced onions until translucent. Add the ground lamb to the skillet, breaking it up with a spatula. Season with salt, black pepper, and cayenne pepper if using. Cook until the lamb is browned and cooked through. Add lemon zest, tomato paste, tapenade (if using), and Italian herbs to the skillet. Stir to combine and adjust seasoning to taste.
Stuff the Squash: Once the spaghetti squash halves are cooked, remove them from the oven and flip them over. Fluff the interior with a fork to create "spaghetti-like" strands. Place a block of feta cheese in each half of the squash. Divide the lamb mixture between the two halves, packing it tightly into the squash cavities. Optionally, add sun-dried tomatoes on top of the lamb mixture.
Bake: If desired, sprinkle mozzarella cheese on top of each stuffed squash half. Return the squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve and Enjoy: Once baked, remove the stuffed spaghetti squash from the oven. Allow it to cool slightly before serving. Cut each half into portions and serve as a satisfying and nutritious meal.
Note: Feel free to customize the recipe by adding extra vegetables or using different types of meat or cheese according to your preferences and dietary needs.
