Join Lean and Clean Fitness Chef Christine as she transforms traditional cabbage rolls into a nutrient-rich dish bursting with flavor. With ground bison as the star, complemented by a medley of veggies and a sprinkle of cheese, this recipe is a wholesome twist on a classic favorite, offering a hearty meal that's both satisfying and nourishing.

Recipe :
1 head of cabbage, sliced
1 pound ground bison (or substitute with ground beef, turkey, etc.)
1 onion, chopped
2 cloves garlic, whole
1 potato, diced
1 bell pepper, diced
1 tablespoon sun-dried tomato paste (or substitute with chopped sun-dried tomatoes)
Salt and pepper to taste
1 teaspoon paprika
Pinch of nutmeg
Pinch of cayenne pepper (optional)
1 tablespoon all-purpose flour
1 cup shredded cheese blend
Instructions:

Preheat your oven to 350°F (175°C).
In a large skillet or pan, sauté the chopped onion and whole garlic cloves in olive oil until softened.
Add ground bison to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
Stir in sun-dried tomato paste, salt, pepper, paprika, nutmeg, and cayenne pepper (if using). Cook for a few more minutes until well combined.
Create a well in the center of the skillet and add the diced potatoes and bell peppers. Cook for a couple of minutes until slightly softened.
Sprinkle flour over the vegetables and meat mixture, stirring to incorporate and thicken the juices.
Remove the garlic cloves from the skillet.
Layer sliced cabbage over the mixture in the skillet, covering it completely. Cover the skillet and allow the cabbage to cook down for a few minutes, adding a splash of water if needed.
Once the cabbage has cooked down, taste and adjust seasoning if necessary.
Transfer half of the cabbage mixture to a casserole dish, spreading it evenly.
Add a layer of the meat and vegetable mixture over the cabbage.
Sprinkle a layer of shredded cheese over the meat mixture.
Repeat layers with the remaining cabbage, meat mixture, and cheese.
Cover the casserole dish with foil and bake in the preheated oven for about 30-40 minutes, or until the cheese is melted and bubbly.
Once baked, remove from the oven and let it cool slightly before serving.
