When I tell you I love tacos I mean I love them!!! If you have never had Birria you are in for a treat. It is well worth the time and effort. I used an instant pot so I could do it all in one pot but you could absolutely use one a dutch oven from stop top to oven or use a slow cooker. I used a combo of Stew setting then 2 hours of slow cooking.

2 lb Short ribs
2lb pot roast with good marbeling

sear off and remove

to the drippings add
1 onion, chopped
1 cinnamon stick
1 bay leaf
4 tomatoes, crushed
1 bunch of cilantro
1t cumin
salt and pepper
1c chopped dried peppers -ancho chilis
2 c water
simmer until broken down
remove bay leaf and cinnamon stick and puree

Add beef to sauce and cook until meat is falling off the bone and easily shredded.

refrigerate beef in sauce overnight to develop flavor and skim off fat

for assembly:
1 corn or flour tortill dipped in sauce
heat on dry side at add queso cotija cheese , beef, onion, cilantro then more cheese

Serve with birria consume for dipping

alternatively serve as a salad or rice bowl.
