The tastiest way to eat tons of veggies in one sitting ! This 1 large pancake has
2 stalks of celery
1 carrot
2 small potatoes
2 small onions
1 handful of cilantro
1” fresh ginger
1/2 zucchini
Salt and pepper
1t soy sauce
Pulse in blender until rough chopped
Dump into a large bowl and add 1/2 c flour , 1/2 c water taste and adjust seasoning .
Pan fry in a large non stick skillet 3-4 min each size . Then flip and do the same . Flip back over adding a bit of oil . Each side should cook twice so it’s extra crispy.
Serve with dipping sauce:
1/4c soy sauce , 1/2 t rice wine vinegar , 1 splash of toasted sesame oil .
