Have you ever made bread using an oven bag ? It comes out perfect ! If you don’t have a Cloche this is a very effective way to bake with zero cleanup !
Dough loves 2 things heat and moisture that is what the bag does .
1400 g water, warm
32g dry yeast
1770 Flour
50g kosher salt
Mix by hand to make a very loose dough . Let rest 20 minutes and fold in thirds then flip over the dough. Repeat once more then refrigerate over night and up to three days . Long , slow fermentation makes the bread far more digestible.
When you are ready divide the dough in 3rds . Take out 1/3 and shape . Let rise 1 hr in bag while oven preheats to 450 degrees . After one hour open the bag dust with flour , slash and reseal. Bake for 40 minutes or until internal temp is 200 degrees .
A word of caution: cut the bag carefully when it comes out as it is very steamy . #artisanbread #bread #baker #fitnesschef
