Why Beef Vegetable Soup? Simple . It’s a grab and go healthy option that keeps you warm and full❤️Chef Chris’ Beef Vegetable Soup2 pounds chopped beef2T olive oil3 cloves garlic, minced 2 carrots, diced 2 celery, chopped1 large onion, diced 1 leek 3 cups beef stock or broth, plus more if needed One 14.5-ounce can whole tomatoes 3 tablespoons tomato paste (optional)2 teaspoons dried parsley flakes 1T Italian seasoning 1 teaspoon kosher salt, or more to taste1/2 teaspoon freshly ground black pepper, or more to taste 1/4 teaspoon cayenne pepper, or more to taste3 red potatoes, cut into chunks In a large pot add olive oil, beef and seasoning. Cook until beef is no longer pink then add veggies and cook until softened.Add tomatoes, paste, and stockBring to a boil then reduce to a simmer. Simmer for at least 15 minutes or up to 2 hours. This can be made in an instant pot as well.
