Dr. Shannon M. Coleman is originally from Birmingham, Alabama. She earned her bachelor's and master's degrees in food science and technology from Alabama A&M University and later obtained her doctoral degree in Animal Science from Colorado State University. From 2015 to 2024, Coleman served as an Associate Professor and State Extension Specialist in the Food Science and Human Nutrition Department at Iowa State University, where she built a distinguished career in academia and Extension services.
Currently, Coleman is an Associate Professor and State Extension Specialist at the Louisiana Cooperative Extension Service, part of the AgCenter. Her work in Extension and Outreach focuses on developing and disseminating consumer food safety curricula and resources for both youth and adults in Louisiana. Coleman is dedicated to translating research into practical solutions that address the needs of diverse communities, particularly in areas such as food safety and sustainable agricultural practices.
Her research employs various evaluation theories to assess intentions, attitudes, and subjective norms related to food safety practices. Coleman has also expanded her research to improve food safety and strengthen the local food system from farm to table, including laboratory studies on non-thermal processing and preservation methods. Her contributions have impacted the academic community and the public, as she continually strives to enhance the well-being of individuals and families through education and outreach.
